Gallus: A Scots word of debatable origin and multiple meaning; bold, daring and in Glasgow, great, stylish and impressive. Everything we wanted this Whisky to be.

Distilled to exacting standards from Pilsner Malt in a 900-litre copper pot still. The spirit was matured in the Barossa Valley micro-climate for 6 years, initially in 100-litre locally rejuvenated and re-charred ex-Bourbon/Tawny Casks. It was then finished, for 12 months, in a Saury French Oak, medium toast Muscat cask sourced from a local Barossa winery.

An enticing golden amber spirit that carries lovely cereal on the nose with notes of caramel and honey. Complex body with cacao, tobacco leaf and oak characters. Great texture, very long with superb lingering spice. As Scots’ pals might say: A pure Gallus dram, by the way.

This is a limited release with only 250 bottles available for purchase in release 001.

Each Gallus Barossa Australian Whisky bottle is individually numbered and comes in a custom Gallus box.

Enjoy it neat or over ice.
